Ashley Thomas is CofC Dining's Registered Dietitian. She received her Masters degree in Nutrition from Florida State University and has worked as a clinical dietitian providing Medical Nutrition Therapy for individuals suffering from a variety of health conditions. Ashley enjoys sharing her passion for nutrition with students and provides the following services: 

 - Nutrition Consultations for food allergies and dietary preferences, nutrition related medical issues, and mindful eating
 - Dining Hall Tours
 - Cooking Demonstrations
 - Nutrition Workshops
 - Guest Speaker for on-campus departments

Our dining locations have the ability to accommodate many food allergies and we work hard to ensure dining options on campus are as safe as possible. We strongly recommend any students on campus with dietary restrictions to contact us so that we may become familiar with their needs and take action to meet concerns.

We recognize and accommodate your dietary needs in a way that's personalized, sensitive and supportive. In fact, we pride ourselves on working with you to make sure you can find the food that fits YOUR life. Simple Selections Logo

Simple Selections is a station that makes eating on campus easier and safer for students with food allergies. The food at this station is made with ingredients that do not contain gluten, soy, peanuts, tree nuts, dairy, eggs, and shell fish. Simple Selections will always serve a balanced meal that includes a protein, a starch, and a vegetable. This unique station first opened at Liberty Fresh Food Co in Spring 2014, and due to its success, we implemented it at City Bistro in Fall 2015 as well. Now students have access to the Simple Selections station seven days a week for lunch and dinner!
